Buffalo chicken dip is a creamy and flavorful appetizer that’s perfect for parties or gatherings. Here’s a simple recipe (from the book) to make buffalo chicken dip:
Ingredients:
– 2 cups shredded cooked chicken (rotisserie chicken works well). This is a great way to use leftover chicken!!
– 8 oz cream cheese, softened
– 1/2 cup buffalo sauce (adjust based on your desired level of spiciness)
– 1/2 cup ranch dressing or blue cheese dressing
– 1/2 cup shredded mozzarella cheese
– 1/2 cup shredded cheddar cheese
– 1/4 cup chopped green onions or diced celery (optional, for garnish)
– Tortilla chips, crackers, or celery sticks for serving
Instructions:
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, combine the softened cream cheese, buffalo sauce, and ranch or blue cheese dressing until smooth and well mixed (if you are cooking in the crock pot you don’t have to premix).
3. Add the shredded chicken to the bowl and mix until the chicken is coated evenly with the creamy mixture.
4. Stir in half of the shredded mozzarella and cheddar cheeses into the mixture. Reserve the remaining cheese for topping.
5. Transfer the mixture to a baking dish or oven-safe skillet, spreading it out evenly.
6. Sprinkle the remaining shredded mozzarella and cheddar cheeses on top of the dip.
7. Bake in the preheated oven for about 20-25 minutes or until the dip is bubbly and the cheese on top is melted and lightly golden brown.
8. Once done, remove from the oven and let it cool for a few minutes. Garnish with chopped green onions or diced celery, if desired.
9. Serve the buffalo chicken dip warm with tortilla chips, crackers, or celery sticks for dipping.

For Super Bowl I wanted to serve this and I realized I had no mozzarella, no ranch and no blue cheese! I only had cheddar cheese and Caesar salad dressing – and I went for it. It was delicious anyway!
