Dinner – Making fajitas with homemade guacamole!

This video making is pretty new to me but I am having fun!

This was a pretty easy meal. I had a previously frozen chicken breasts package that I had marinated in some seasonings – my traditional Mexican blend (Chili powder, cumin, paprika, oregano, garlic powder, onion powder). I defrosted them and cooked them whole on the stovetop. After I removed them from the pan I added some olive oil and added cut up veggies – mushrooms, green peppers, red onions, garlic, and broccoli. Notice the broccoli was on its last legs (some of the ends had yellowed). That’s fine!

I added the chicken back to the pan when all of the veggies had softened but remained a bright green. We warmed up some tortillas (on a plate in the microwave) and piled them high with the mix and our desired toppings. We had made some home made guacamole too!

Here is a simple guacamole recipe that is in the book!

2 ripe avocados, peeled and pitted
1 lime, juiced
1/4 cup red onion, finely chopped
1-2 cloves garlic, minced
1 medium tomato, diced
2 tablespoons fresh cilantro, chopped
Salt and pepper to taste

Mash the avocados in a bowl with a fork. Add lime juice, red onion, garlic, tomato, cilantro, salt, and pepper. Mix until well combined. Adjust seasoning to taste.
